After sourcing the Raw Cashew Nuts (RCN) from farmers, they are dried under the sun to reduce their moisture content. Minimizing moisture in RCN is crucial for increasing its shelf life and maintaining quality during storage and processing.
The RCN are steamed to soften their outer shells, making deshelling more efficient. During this process, the raw kernels are carefully scooped out. The outer shell, which accounts for nearly 70% of the entire RCN, is separated at this stage.
The raw kernels are moved into a hot chamber, where they are kept for 7+ hours to make them crunchy and easier to peel. After heating, the kernels are shifted to a moisture room for conditioning and then transferred to a peeling machine to remove the thin outer skin.
A nano pic sorter is used to separate the kernels according to size and color. Before final packing, the finished kernels are once again transferred to a hot chamber for 2+ hours to further reduce moisture, ensuring premium quality and longer shelf life.
